Florida, a state better known for theme parks, hurricane season, and the slow collapse of its once-mighty citrus industry, rarely enters that mental frame. A study conducted by researchers from the University of Florida's Institute of Food and Agricultural Sciences (UF/IFAS) highlights the feasibility of coffee cultivation as a specialty crop in Florida. The findings aren't speculative enthusiasm from agricultural boosters. Researchers from UF/IFAS spent three years examining whether the state's climate and soil could support the crop, and using four coffee varieties, the team found strong yields, high coffee quality, and profits that could surpass citrus farms. He comes from a long line of coffee farmers in Brazil, the world's largest coffee producer, and he eventually began thinking about what it would take to grow the crop in Florida. In total, 48 Arabica plants were germinated in 2022 before being transplanted to UF's Tropical Research and Education Center in May of 2023. The Soil Problem — and Its Solution
The physical landscape of South Florida is not immediately welcoming to coffee. The Florida citrus region is characterized by sandy soils, mostly Spodosols and Entisols of marine origin, with good water drainage but low nutrient retention. This presents a real challenge for coffee, which thrives in rich, well-drained earth with high organic matter content. Researchers expected soil to be among the primary obstacles they'd need to engineer around.
What they found, however, was that the soil problem was more tractable than anticipated. While researchers expected issues to arise from the region's sandy soil — which were resolved by nutrient-rich amendments — the major constraint came from coffee's "intense management needs," including "expertise in fertilization, irrigation, pruning, and other techniques." In other words, Florida dirt can be fixed. The harder gap to close is the human one. There simply aren't many people in the continental United States who know how to properly cultivate, manage, and harvest coffee at a commercial scale. That expertise has historically lived in Brazil, Vietnam, Colombia, Ethiopia, and a handful of other producing nations — not in Homestead or Gainesville.
UF/IFAS researchers state, "one of the biggest challenges is that coffee is not traditionally part of Florida's crop portfolio. While we can borrow knowledge from established crops such as citrus, many production practices must still be adapted specifically for coffee." The crop also requires plenty of specialized equipment to harvest and process. This equipment — pulpers, fermentation tanks, drying beds, hullers — is common on farms in Central America and East Africa but essentially absent from Florida's agricultural supply chain.
The Climate Equation
Coffee's Traditional Geography
For centuries, coffee has been grown between two somewhat arbitrary lines above and below the equator. The stretch between roughly the 23.43°S and 23.43°N parallels — also known as the tropics of Capricorn and Cancer, respectively — is also often referred to as the "coffee belt." Countries with large swaths of land within this boundary — Brazil, Colombia, Ethiopia, and Vietnam, and dozens more — have historically dominated production. The Arabica vs. Robusta Question
Not all coffee is created equal, and the variety question is central to Florida's viability as a producer. The global market is dominated by two species. Coffee beans consumed across the globe come from two species: Coffea arabica and Coffea canephora, also known as Robusta. Historically, coffee drinkers prefer Arabica beans for their specific flavor and aroma. Arabica is the premium tier — the complex, nuanced stuff that specialty roasters build entire identities around. Robusta is more bitter, higher in caffeine, and typically used in espresso blends and instant coffee.
For Florida, the species choice is not just about consumer preference. It's about survival. Studies from UF/IFAS researchers have demonstrated that arabica production is expected to decline by 2050 due to the warming climate. However, robusta is a great alternative — not only does it taste great, it's more sustainable; it's better adapted to fluctuating environmental conditions and is lower maintenance than arabica. Ferrão's team is running trials on both. Coffea arabica and Coffea canephora plants are being tested across contrasting environments and management systems, from South Central to North Florida, including both field and high-tunnel production.
Ferrão is also trying to grow coffee in Pierson, in Volusia County, and with indoor production using high-tunnel structures in North Florida — marking the first time they've tested such a diverse set of coffee materials in Florida conditions. High-tunnel production, essentially a scaled-up agricultural greenhouse, allows researchers to extend the viable growing window and protect plants from the cold snaps that remain the single biggest climatic threat to any Florida coffee enterprise. The geographic diversity of these trials is itself a statement of ambition: this is not a single-plot experiment in the warmest corner of the state. It's a systematic effort to understand where on Florida's map coffee has the best chance to survive and produce.
The Kona Blueprint — And What It Means for Florida
When researchers and growers discuss the realistic ceiling for Florida-grown coffee, one reference point comes up repeatedly. Jonathan Crane, associate director of the University of Florida's Tropical Research and Education Center, brought up the example of Kona coffee, introduced to Hawaii in 1829 and grown only on around 9,000 acres on the slopes of the Hualalai and Mauna Loa mountains. One of the most expensive coffees in the world, it averages around $20 per pound and can get up to $60 or more.
Crane is straightforward about scale: "It's not like we're going to become a major coffee production area for the world like Brazil or Vietnam." But that framing may actually undersell the opportunity. Kona coffee is not important because of volume — it's important because of identity. Hawaiian producers built a globally recognized brand out of a niche geographic terroir, and that brand now commands prices that dwarf commodity coffee. Crane sees potential for family farms and small growers to similarly make a living selling specialty, "Florida coffee"-branded beans.
The Kona model also illustrates what Florida would need to replicate: not industrial-scale agriculture, but meticulous craft production backed by a compelling origin story. Florida already has one ingredient that Kona took decades to cultivate — American consumer demand for domestic, traceable, story-rich food products. The farm-to-table movement, the craft beverage explosion, the premium on local sourcing — all of it creates cultural headroom for a Florida coffee brand to grow into.
Agritourism, Farm-to-Table, and the Experiential Economy
The researchers at UF/IFAS are thinking beyond raw production yields. Based on current engagement with growers, the strongest interest is emerging from farm-to-table and agritourism-oriented producers. These stakeholders are less focused on volume and more on the experiential side of coffee. The vision invites consumers to see the plants, participate in harvest, and engage with on-site processing and roasting. This is a smart read of where the market is heading. American consumers increasingly want a connection to what they consume, and coffee — with its romantic associations with exotic origins and artisan craft — is particularly susceptible to the pull of origin tourism.
In these systems, flavor still matters, but plant reliability, vigor, and consistency under Florida conditions often rank higher. For now, this segment represents the most near-term fit for coffee production. The timeline for a full-scale commercial operation stretching across thousands of acres remains distant and uncertain. But a profitable agritourism operation where visitors pay to pick coffee cherries, learn about processing, and buy a small-batch bag of locally roasted beans? That's a business model with precedent, and it could work in the Sunshine State within a matter of years rather than decades.
The researchers highlighted Florida's network of specialty roasters, coffee shops, and small-scale farm-to-table operations as potential beneficiaries of a domestic supply chain. Florida's urban centers — Miami, Tampa, Orlando, Jacksonville — already have thriving specialty coffee cultures. A direct pipeline from a South Florida farm to a Miami roastery carries a story that no imported bag can match.
The Breeding Horizon and the Long Game
Science, not sentiment, will determine whether Florida coffee becomes a lasting agricultural reality. To build a foundation for long-term progress, Dr. Ferrão's team is pursuing two complementary goals: advancing fundamental coffee research while evaluating pathways toward viable production. On the research side, the team is leading international collaborations with established coffee breeding programs in Brazil, France, and Africa.
By evaluating the same genetic backgrounds under different soils, climates, and management protocols, the team can examine genotype-by-environment interactions and identify which combinations of genetics and practices show the most promise for Florida growers. Data emerging from these trials is already shaping management recommendations and breeding priorities, clarifying which coffee types may be workable for local production, which hold value as breeding parents, and which are poorly aligned with Florida's conditions.
UF/IFAS scientists will explore the possibilities using artificial intelligence tools to study the roots of Arabica plants growing on site. To understand how coffee grows in the field, the researchers are using minirhizotrons — clear plastic tubes with tiny cameras inside. The devices are placed underground alongside plants to record images of their roots. The root architecture of coffee under Florida's specific soil chemistry and moisture patterns has never been systematically studied before. This is genuinely new scientific territory. Researchers will apply artificial intelligence and machine learning technology, along with computer vision-based hyperspectral imaging systems, to capture data at a resolution and volume that was impossible even a decade ago.
The long-range target is ambitious but clearly defined. By 2029, the long-term goal is to identify strong candidate coffee cultivars adapted to Florida conditions. However, success is defined by more than a single release. According to Dr. Ferrão, releasing a cultivar adapted to Florida is the final product, "but what will really define success is how much knowledge and how many new tools we can bring to the coffee community to support breeding in Florida and beyond."
Could Florida Coffee Actually Move the Market?
Realism demands an honest accounting of scale. It is unlikely that coffee production in Florida will really move the needle as far as the country's importing needs are concerned; we still consume more coffee than we produce by orders of magnitude. American coffee drinkers account for 20% of all global imports — an enormous appetite that no domestic growing operation could hope to satiate in the near term. But the question of whether Florida coffee can feed the whole market is the wrong question. The right question is whether it can carve out a profitable, distinctive niche within that market.
The global supply pressures are real and worsening. The study responds to the pressing need for new coffee cultivation areas amid challenges like pests, climate change, and economic instability that affect coffee prices worldwide. Ferrão hopes to demonstrate that Florida can nurture a homegrown coffee industry, providing a domestic supply of the crop at a time when climate change is devastating coffee plots in countries like Brazil and Kenya. "We are the country that consumes the most coffee in the world," Ferrão said. "If we think about the fact that by 2050, more than 60 percent of coffee production around the globe is going to decline, there is no way that this country won't be affected."
New pests, diseases, price instability, and climate change are all driving up costs around the world. These pressures may create an opportunity for domestic production, though perhaps not on a large scale. That qualification — "not on a large scale" — is not a concession of failure. It's a description of the niche where Florida coffee is most likely to succeed: high-value, specialty-grade, origin-story-driven production that commands premium prices and fuels ancillary economic activity in the form of agritourism, local roasting, and direct-to-consumer sales.
What Comes Next
The findings so far are preliminary, based on the initial harvest of three-year-old coffee trees, and more research is needed to assess the long-term viability of coffee in Florida, including investigating other coffee varieties that may better withstand the state's weather variations. Three-year-old trees are young by any coffee grower's standard — many farms don't consider a tree to be in its prime until its fifth or sixth year of production. The data set will need to grow alongside the trees themselves before anyone can make definitive claims about Florida's commercial ceiling.
The researchers acknowledged that integrating coffee into Florida's agricultural framework requires significant adaptation of existing techniques gleaned from other crops, as coffee has unique requirements regarding fertilization, pest control, and harvesting equipment. Building that technical infrastructure — the training programs, the equipment suppliers, the agronomic extension networks — will be a years-long undertaking in its own right. A knowledge gap can be overcome, certainly more easily than climate-based hang-ups. A smaller but growing group of stakeholders is watching to see whether coffee could one day support larger-scale diversification, particularly in regions heavily affected by citrus decline. For those farmers — men who have watched orange groves die row by row and spent years searching for what comes next — the prospect of Florida coffee is more than an academic curiosity. It's a potential lifeline. And if the scientists in Homestead and Citra and Pierson have their way, the next great chapter in American specialty coffee might be written not in some misty highland across the ocean, but in the flat, sun-hammered terrain of the Sunshine State.
